Pumpkin Bars w/Cream Cheese Frosting
1 2/3 c. Sugar
1 c. Coconut oil
4 eggs
1 15 oz. can pumpkin purée
2 c. Flour
1 t. Salt
1 t. Soda
2 t. Cinnamon
1/4 t. Nutmeg
Preheat oven to 350°. Cream sugar and oil. Add eggs and pumpkin and mix well. Stir in dry ingredients just until combined. Bake in prepared large cookie sheet type pan, 2–8”x12” pans, or 3–8”x8” pans.
Frosting:
1–8 oz. package cream cheese
1/2 stick butter (1/4 cup)
3 c. powdered sugar
2 t. vanilla
Cream butter and cream cheese together until smooth. Add powdered sugar and vanilla and beat until fluffy. Frosting can be spread or piped on top. Sprinkle with a little cinnamon to make pretty!
